Ingredients to make Poha
Poha – 2 cups
Onion – 1
Pomegranate seeds – 1/2 cup
Green chili – 3-4
Green coriander – 3-4 tbsp
Turmeric – 1/2 tsp
Coriander seeds – 1 tsp
Rai – 1 tsp
Fennel seeds – 1 tsp
Sugar – 1 tsp
Curry leaves – 10-15
Peas – 1/2 cup (optional)
Asafoetida – 1 pinch
Lemon – 1
Sev – 1/4 cup
Oil – 2 tbsp
salt – as per taste

How to make Poha
To make tasty poha, first clean the poha and wash it 2-3 times with clean water. After this, keep the soaked poha on a sieve for some time and let the water drain out. Meanwhile, finely chop onion, green chillies and coriander leaves. If the sieved poha seems too dry, then a little water can be sprinkled over it. Now put oil in a pan and heat it on medium flame. After the oil is hot, add mustard seeds, fennel, asafoetida and coriander seeds and fry them.

After a few seconds, when the masala starts crackling, add curry leaves to it. After this add finely chopped onions and sauté. When the color of onion turns light pink, put poha in the pan and add turmeric, sugar and salt according to taste and mix it well with spices with a ladle. If you want, you can mix turmeric, sugar and salt in the poha beforehand.

Now cover the pan and let the poha get ready. During this, keep stirring the poha in between so that it does not stick to the bottom of the pan. If the poha seems dry, sprinkle some water and make it soft. After cooking for 2-3 minutes, turn off the gas. Tasty poha is ready, serve it hot after adding raw onion, coriander leaves, fine sev, pomegranate seeds and squeezing lemon.
